Banana Oatmeal Muffins

This recipe makes 12 muffins


  • 225g plain flour
  • 75g porridge oats
  • 100g caster sugar
  • 2 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1 egg
  • 200ml milk
  • 75ml vegetable oil
  • 1/2 teaspoon vanilla extract
  • 250g bananas

Step 1

Preheat oven to 180°C.

Step 2

In a mixing bowl, combine flour, oats, sugar, baking powder, bicarbonate of soda and salt.

Step 3

With a fork, mash the bananas in a bowl.

Step 4

In a separate bowl, lightly beat the egg then stir in the milk, vanilla extract and oil. Stir in the mashed bananas.

Step 5

Gradually stir the liquid mixture into the flour mixture until combined.

Step 6

Line a 12-hole tray with muffin cases and divide the mixture evenly between them.

Step 7

Bake for 20-22 minutes until golden brown.
