Chocolate Oreo Brownies


  • 225g Butter
  • 450g caster sugar
  • 150g dark chocolate, cut into small chunks
  • 5 medium eggs
  • 110g Plain Flour
  • 60g Cocoa Powder
  • 1 packet sandwich biscuits/cookies (we used Oreo’s here, but substitute whatever ones you prefer). You will need 9 whole ones to decorate the brownies and 6 crushed ones to add to the brownie mix.

Step 1

Preheat your oven to 190C / 170C fan and line a 24cm square baking tin or dish with baking paper.

Step 2

Melt the butter and sugar together in a pan, then take off the heat before melting the chocolate in a bain-marie, stirring regularly until you have a smooth velvety consistency. Allow the chocolate to cool slightly while you whisk the eggs in a Mason Cash mixing bowl. Stir all the wet ingredients into the egg mixture in the bowl, before folding in the flour, cocoa and finally the crushed cookies.

Step 3

Pour the mixture into the dish evenly, pressing the whole cookies uniformly across the top of the mixture then bake for approximately 35 to 40 minutes until the brownie is firm yet the inside is still soft and yielding when pressed.

Step 4

Allow to cool and feel free to refrigerate before cutting into squares and serving with cream, ice cream or custard.
