Dark Chocolate Mousse


  • 75g mini marshmallows
  • 25g soft butter
  • 125g dark chocolate
  • 30ml hot water
  • 130ml double cream
  • 1 teaspoon vanilla extract

Step 1

Melt the marshmallows, butter, chocolate and water in a heavy-based saucepan over a gentle heat. Remove from the heat once melted and allow to cool slightly.

Step 2

Meanwhile, whip the cream and the vanilla extract until thick.

Step 3

Fold the cream into the chocolate mixture until combined.

Step 4

Pour the mixture into the dessert bakers and chill until ready to eat.
