Pumpkin Seed and Sea Salt Bread

This delicious bread is a real crowd- pleaser.


  • 500g strong bread flour
  • 7g sachet fast action yeast
  • 1 tsp salt
  • 2 tablespoons olive oil
  • A handful of pumpkin seeds
  • A handful of coarse sea salt
  • 375ml warm water
  • Knob of butter for greasing

Step 1

Tip the flour into a large mixing bowl then tip the salt into one side of the bowl and yeast to the other side

Step 2

Mix together and create a well in the centre of the bowl

Step 3

Pour the water and olive oil into the well and combine until the mixture forms a rough dough

Step 4

Tip the dough mixture onto a work surface and knead for approximately 10 minutes, or until smooth and elastic

Step 5

Allow the dough to rise in a slightly greased airtight container until doubled in size. Meanwhile, pre-heat an oven to 220°c/ 420°f/ gas mark 7 and grease the bread form with the butter.

Step 6

Once risen, knock the air out of the dough. Weigh your dough and divide it equally into 7 pieces.

Step 7

Create 7 dough ovals and place them inside each ‘petal’ and the centre of the bread form. Allow the dough to rise again for approximately 30 minutes.

Step 8

The dough segments should now be touching one another. Using a pastry brush, gently coat the central bun with water and gently press in the pumpkin seeds

Step 9

Sprinkle the sea salt on top of the oval dough petals, drizzle on some olive oil and place them onto the middle shelf of the oven for 15-20 minutes or until the bread sounds hollow when you tap underneath.
