Banana Oatmeal Muffins

Healthy and delicious, these banana oatmeal muffins are a great morning or afternoon treat.

Recipe makes 12 muffins.

Ingredients and Method

Ingredients

  • 225g Plain Flour
  • 75g Porridge Oats
  • 100g Caster Sugar
  • 2 tsp Baking Powder
  • 1 tsp Bicarbonate of Soda
  • 1/2 tsp Salt
  • 1 Egg
  • 200ml Milk
  • 75ml Vegetable Oil
  • 1/2 tsp Vanilla Extract
  • 250g Bananas

Method

  1. Preheat oven to 180°C.
  2. In a mixing bowl, combine flour, oats, sugar, baking powder, bicarbonate of soda and salt.
  3. With a fork, mash the bananas in a bowl.
  4. In a separate bowl, lightly beat the egg then stir in the milk, vanilla extract and oil. Stir in the mashed bananas.
  5. Gradually stir the liquid mixture into the flour mixture until combined.
  6. Line a 12-hole tray with muffin cases and divide the mixture evenly between them.
  7. Bake for 20-22 minutes until golden brown.
