Chloe's Easy Vanilla Cupcakes

Ingredients and Method

Ingredients

  • 150g unsalted butter, softened
  • 150g caster sugar
  • 3 eggs, beaten
  • 150g self-raising flour
  • ½ tsp vanilla extract
  • 2 tsp whole milk
  • For the vanilla buttercream
  • 150g unsalted butter, softened
  • 350g icing sugar
  • 4 tbsp whole milk
  • ½ tsp vanilla extract
  • Sprinkles to decorate

Method

  1. Preheat your oven to 180°C / 150°C Fan, and line a muffin tray with 12 cupcake cases.
  2. Beat the butter and sugar together in a mixing bowl until smooth. Then add in your eggs, self-raising flour and vanilla extract and beat the mixture until fully combined.
  3. Add 1 tbsp of milk at a time to loosen up the batter. Scoop the batter into the cupcake cases and bake in the oven for 18-20 minutes. Once cooked, remove from the oven and leave to cool on a wire rack.
  4. While the cupcakes are baking, beat the butter and icing sugar until smooth. While beating the frosting, slowly add the vanilla extract until fully combined.
  5. If the mixture is looking a little thick, add 1 tbsp of milk at a time until you reach your desired consistency.
  6. Separate the icing into 3 smaller bowls and add the food colouring of your choice and mix well.
  7. Spoon the frosting into a piping bag and add your favourite piping tip. Pipe the frosting onto the cupcakes and cover with some sprinkles for decoration.
