Trio of Desserts

Ingredients

Lemon Posset:

  • 300ml/10fl oz double cream
  • 75g/2.5oz caster sugar
  • Zest & Juice of 1 lemon

Strawberry Cheesecake Posset

  • 300ml/10fl oz double cream
  • 75g/2.5oz caster sugar
  • 3 strawberries, finely chopped
  • 4 digestive biscuits, finely crushed
  • 30g butter

Banoffee Pie Posset

  • 300ml/10fl oz double cream
  • 75g/2.5oz caster sugar
  • 1 ripe banana, sliced
  • 2 tablespoons caramel sauce
  • 4 digestive biscuits, finely crushed
  • 30g butter

Lemon Posset

Place the double cream and sugar into a pan and bring to the boil on a low heat. Boil for around 3 minutes and then allow to cool in a Mason Cash batter bowl. Add the lemon juice and zest and whisk vigorously for a few minutes. Pour the mixture into a mug and refrigerate for a minimum of 4 hours. Serve with a sprinkling of your choice – blueberries, dark chocolate or raspberries are popular choices.

Strawberry Cheesecake Posset

Melt the butter in a frying pan and add the biscuit crumbs, mixing in the pan until the crumbs are coated. Put the cookie mixture into the bottom of a mug. Place the double cream and sugar into a pan and bring to the boil on a low heat. Boil for around 3 minutes and then allow to cool in a Mason Cash Batter Bowl. Add the strawberries and whisk vigorously for a few minutes. Pour the mixture over the biscuit in the mug and refrigerate for a minimum of 4 hours. Serve with a sprinkling of fruit or grated dark chocolate.

Banoffee Pie Posset

Melt the butter in a frying pan and add the biscuit crumbs, mixing in the pan until the crumbs are coated. Put the cookie mixture into the bottom of a mug and press down gently. Drizzle the caramel sauce over the cookies to create a layer in the mug followed by a layer or two of sliced banana. Place the double cream and sugar into a pan and bring to the boil on a low heat. Boil for around 3 minutes and then allow to cool in a Mason Cash Batter Bowl. Whisk vigorously for a few minutes then pour the mixture over the bananas in the mug and refrigerate for a minimum of 4 hours. Serve with a sprinkling of blueberries or grated dark chocolate.
