Triple Chocolate Cake Truffles


For the Truffle

  • 120g unsalted butter, softened
  • 150g caster sugar
  • 2 large eggs beaten
  • 125g self raising flour
  • 55g cocoa powder
  • 3tbsp milk at room temperature

For the Topping

  • 200g milk chocolate, dark or white chocolate
  • Shavings, sprinkles or nuts of your choice

Step 1

Preheat the oven to 180°C/ 350°F fan/ gas 4

Step 2

Cream the butter and sugar together until light and fluffy

Step 3

Sieve the cocoa and flour into a bowl.

Step 4

Stirring all the time, add a third of the eggs and a third of the flour mixture into the sugar and butter.

Step 5

Add another third of the egg and a third of the flour and mix.

Step 6

Add the last third of the egg and flour and mix well until you have a smooth thick batter

Step 7

Grease the bottom half of a Mason Cash silicone cupcake mould with butter and pour in the mixture to level fill each cup.

Step 8

Place the top half of the mould over the bottom half and clip together.

Step 9

Bake for 35 minutes on the middle shelf in the oven until browned.

Step 10

To decorate, melt the chocolate in a bain-marie then coat the cake truffles in chocolate.

Step 11

Allow to cool on some greaseproof paper. If decorating with sprinkles or nuts, coat the cake truffles in these toppings before the chocolate cools completely.
