Zombie Bites

Ingredients

  • 250g plain flour
  • ¼ tsp baking soda
  • 150g unsalted butter
  • 220g light soft brown sugar
  • 75g white caster sugar
  • 1 tbsp. vanilla extract
  • 1 tbsp. milk
  • 1 egg
  • 200g chocolate chips
  • 150g icing sugar
  • 75g butter
  • Red food colouring
  • 1 tsp milk
  • White mini marshmallows

Method

Step 1

Pre-heat the oven to 170°C/330°F. Grease baking sheets with butter and parchments paper.

Step 2

Melt the butter and mix in the brown and white sugar. Once fully combined add the vanilla, egg and milk and mix until smooth.

Step 3

Mix in the flour and baking soda and mix until fully combined. Stir in the chocolate chips.

Step 4

Roll the cookie dough into small balls and place onto a baking sheet. Ensuring the balls are 5cm apart.

Step 5

Bake in the oven for 15 to 18 minutes until the cookies are lightly brown. Remove from the oven and leave to cool completely on the tray.

Step 6

Meanwhile, mix together the icing sugar, butter and red food colouring until you have a light buttercream.

Step 7

Cut the cookies in half and coat one half in the red buttercream. Add the mini marshmallows around the outside of the semi-circle and place the other half of the cookie on top. Place back in the oven for 2 minutes.

Step 8

Repeat for all cookies and enjoy the bite!
