
Banana Oatmeal Muffins


Healthy and delicious, these banana oatmeal muffins are a great morning or afternoon treat.
Recipe makes 12 muffins.

Ingredients
- 225g Plain Flour
- 75g Porridge Oats
- 100g Caster Sugar
- 2 tsp Baking Powder
- 1 tsp Bicarbonate of Soda
- 1/2 tsp Salt
- 1 Egg
- 200ml Milk
- 75ml Vegetable Oil
- 1/2 tsp Vanilla Extract
- 250g Bananas
Method
- Preheat oven to 180°C.
- In a mixing bowl, combine flour, oats, sugar, baking powder, bicarbonate of soda and salt.
- With a fork, mash the bananas in a bowl.
- In a separate bowl, lightly beat the egg then stir in the milk, vanilla extract and oil. Stir in the mashed bananas.
- Gradually stir the liquid mixture into the flour mixture until combined.
- Line a 12-hole tray with muffin cases and divide the mixture evenly between them.
- Bake for 20-22 minutes until golden brown.
