
Caramel Panna Cotta with Spiced Pear Compote

Ingredients and Method
Ingredients
- For the Caramel Panna Cotta
- 500ml double cream
- 100g granulated sugar
- 1 tsp vanilla extract
- 2 leaves of gelatin
- For the Spiced Pear Compote
- 3 ripe pears, peeled, cored, and diced
- 50g brown sugar
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- 50ml cup water
- 1 tbsp lemon juice
- A pinch of salt
Method
- Fill a small bowl with cold water and leave the leaves of gelatin to soak in the water for 5-10 minutes.
- In a saucepan, combine the double cream and granulated sugar. Heat the mixture over medium heat, stirring constantly, until it begins to simmer and the sugar has dissolved. Remove from heat and stir in the vanilla extract.
- Squeeze the water from the gelatin and add to the hot cream mixture. Whisk until the gelatin is completely dissolved.
- Pour the caramel panna cotta mixture into serving glasses or ramekins, filling each about two-thirds full.
- Refrigerate the panna cotta for at least 4 hours or until set.
- To make the spiced pear, combine the diced pears, brown sugar, ground cinnamon, ground nutmeg, ground cloves, water, lemon juice, and a pinch of salt in a saucepan.
- Heat the mixture over medium heat, stirring occasionally, until the pears are tender and the liquid has reduced to a syrup-like consistency. This should take about 15-20 minutes.
- Remove the spiced pear compote from the heat and let it cool to room temperature.
- Once the caramel panna cotta is set, spoon a generous amount of the spiced pear compote over the top of each serving.
- Optionally, garnish with a sprig of fresh mint, a spoonful of dulce de leche or a sprinkle of crushed toasted nuts for added texture.
