
Cranberry & Pistachio Cookies


Pistachio and cranberry are a flavour match made in heaven. These delicious, crunchy cookies make for a great afternoon treat or wrapped up for the perfect homemade gift.
Ingredients and Method
Ingredients
- 225g plain flour
- 125g butter, softened
- ½ tsp vanilla extract
- 60g light brown soft sugar
- 60g golden caster sugar
- 75g pistachios
- 75g dried cranberries
- 1 egg
Method
- Preheat the oven to 180°C/gas mark 4 and prep two wide baking sheets with greaseproof paper.
- Whisk the butter, sugar, egg and vanilla extract in a large mixing bowl. Stir in the flour, pistachios and cranberries and bring the mix together as a dough.
- Using two tablespoons, scoop and shape the dough and place on to the baking sheets, making sure to leave enough space in between to allow them to expand. Flatten the dough down and bake in the oven for 15 minutes.
- Leave to cool and serve with a nice hot cup of tea.
