
Chloe's Easy Vanilla Cupcakes

Ingredients and Method
Ingredients
- 150g unsalted butter, softened
- 150g caster sugar
- 3 eggs, beaten
- 150g self-raising flour
- ½ tsp vanilla extract
- 2 tsp whole milk
- For the vanilla buttercream
- 150g unsalted butter, softened
- 350g icing sugar
- 4 tbsp whole milk
- ½ tsp vanilla extract
- Sprinkles to decorate
Method
- Preheat your oven to 180°C / 150°C Fan, and line a muffin tray with 12 cupcake cases.
- Beat the butter and sugar together in a mixing bowl until smooth. Then add in your eggs, self-raising flour and vanilla extract and beat the mixture until fully combined.
- Add 1 tbsp of milk at a time to loosen up the batter. Scoop the batter into the cupcake cases and bake in the oven for 18-20 minutes. Once cooked, remove from the oven and leave to cool on a wire rack.
- While the cupcakes are baking, beat the butter and icing sugar until smooth. While beating the frosting, slowly add the vanilla extract until fully combined.
- If the mixture is looking a little thick, add 1 tbsp of milk at a time until you reach your desired consistency.
- Separate the icing into 3 smaller bowls and add the food colouring of your choice and mix well.
- Spoon the frosting into a piping bag and add your favourite piping tip. Pipe the frosting onto the cupcakes and cover with some sprinkles for decoration.
